Southern Caviar

This spicy cheese spread is delicious, though probably not low cholesterol. You can vary the amounts of any of the ingredients, according to what you have on hand or to your taste.



125 gr deli-style cream cheese
250 gr grated old cheddar cheese
1/2 cup mayonnaise
1 Tbsp sambal oelek, or Asian hot chili sauce

Put cream cheese, cheddar, mayonnaise and hot sauce in a food processor and process until well combined.
1/4 cup chopped green onions
1/2 cup chopped roasted red peppers
salt and freshly ground pepper
pinch of cayenne

Stir in green onions, peppers and seasonings.
Spoon into a crock and cover.
Serve with crackers, or scones, or thin slices of baguette.
