Sausages and Peppers

I like to barbeque the sausages instead of cooking them in the microwave. Otherwise, this is a quick and easy supper.
Ingredients: Method:
fresh Italian sausages, 1 per serving

Pierce the sausages with a fork before grilling them over medium heat on the barbeque.
1-2 Tbsp olive oil
onion(s) chopped into ½-inch cubes
red, green, yellow bell peppers,
cut into 2-inch chunks
fresh garlic, chopped

Heat the oil in a large, microwave-safe dish, for 2 minutes at 100%
Stir the onions into the oil and cook for 2 minutes
Add the peppers and garlic. Cook for another 2 minutes.

1 tin of diced tomatoes
¼ cup (packed) fresh basil leaves
OR substitute dried basil
Slice the cooked sausages and add them to the mixture
Stir in the tomatoes and basil.
Cover and cook for 7-10 minutes.

Serve over rotini pasta, or with Italian bread.
