Rice with Leeks & Bacon

Not exactly low cholestorol.

Ingredients:

Method:

1 lb bacon, chopped

Fry bacon pieces in a large skillet until crisp. Remove from pan and reserve.
2-3 leeks, chopped
1 Tbsp olive oil, if necessary

Stir fry leeks in 1 Tbsp bacon drippings plus the oil until tender.
2 cups cooked brown rice
2 Tbsp tomato paste
1/4 tsp dried oregano
1/2 cup water or stock
salt & pepper to taste
Add rice, tomato paste, spices and stock. Simmer 3 to 5 minutes, stirring frequently, until liquid is absorbed.
grated Parmesan cheese (optional) Stir bacon bits into rice mixture, sprinkle with cheese and serve.
