Rack of Lamb


Preheat oven to 400°


1 rack of lamb per 2 people

1 bunch of rosemary

1/2 bunch of thyme

4 cloves of garlic

2 Tbsp butter

Serves ?


Season the lamb with salt & pepper and sear on all sides.

Place the lamb on top of the herbs and garlic. Put in the oven for approx. 10 minutes for medium rare.

Remove from the oven. Add butter to the roasting pan and baste the lamb to finish.

Serve with a White Bean Cassoulet
