Pecan Pie


Preheat oven to 450º F

People rave over this very rich dessert.


an unbaked pastry shell

3 eggs

½ cup brown sugar

¼ tsp salt

1 cup corn syrup

½ tsp vanilla

⅓ cup melted butter

chopped pecans

whole pecans

whipped cream for topping

Serves 8


Flute the edges high to hold the filling.

Beat the eggs until light and frothy.

Beat in the brown sugar gradually.

Add the remaining ingredients and beat until just mixed.

Then stir in the chopped pecans.

Pour filling into the unbaked shell. Place whole pecans on top in a decorative pattern.

Bake for 10 minutes. Reduce oven temperature to 350º and continue baking until filling is set.

Serve with a spoonful or two of whipped cream on top.
