Stir-Fried Mushrooms with Baby Bok Choy


Try this underneath a fillet of bbq’d fish.


1 Tbsp sesame seeds

1 Tbsp olive oil

2 cloves garlic, minced

1 tsp minced ginger

3 cups sliced portobello mushrooms

1 cup sliced shitake mushrooms

2 cups diced baby bok choy

1 Tbsp soy sauce

1/3 cup thinly sliced green onions

1/4 tsp hot pepper flakes

1/2 tsp pepper

2 Tbsp lemon juice

Serves 4


Toast sesame seeds by tossing in a dry skillet over medium-low heat until light brown. Reserve.

Heat the oil in the same skillet. Add garlic and ginger; cook for about 1 minute until fragrant. Stir in all the mushrooms, saute for about 2 mins.

Add boy choy and cook for another 3 minutes until bok choy softens. Add the soy sauce and remove from the heat.

Stir in green onions, pepper flakes and pepper. Drizzle with lemon juice and top with toasted sesame seeds.
