Bonnie Stern's Meatloaf

Ingredients:

Method:

2 tsp olive oil
1 onion, chopped
2 cloves garlic, finely chopped

Heat oil in a large skillet. Add onion and garlic and cook gently until tender.
2 pounds extra-lean ground beef
3 egg whites, or 1 whole egg
1-1/2 cups fresh breadcrumbs
1 Tbsp grainy Dijon mustard
1 Tbsp Worcestershire sauce
1/2 tsp hot red pepper sauce (optional)
1 tsp salt; 1/2 tsp pepper
1/2 cup tomato sauce, ketchup, commercial chili sauce, or salsa
2 Tbsp chopped fresh parsley

In a large bowl, combine beef, egg, breadcrumbs and seasonings. Add the cooled onion-garlic mixture, and knead everything lightly together until blended.


Pat mixture into a loaf pan; (or, shape into a loaf and bake on a lined baking sheet). Bake in preheated 350° oven for 45 minutes.
1/4 cup tomato sauce or ketchup
1 Tbsp Dijon mustard
Combine tomato sauce and mustard for topping. Brush topping on meatloaf and return to oven, uncovered, for another 25 minutes.
Cool for 10 minutes before slicing and serving.
