Ann Landers' Meatloaf |

Like about 40 gazillion other people worldwide, this is my favourite meatloaf recipe. Sometimes I substitute crushed corn flakes or crackers or potato chips for some of the bread crumbs. Sometimes I don't use as many bread crumbs as the recipe calls for, and I often don't use the tomato sauce toppping; but whatever you do, don't leave out the ketchup or the onion soup mix.

2 lbs leanest ground beef
2 eggs
1 1/2 cups bread crumbs
3/4 cup ketchup
1 pkg dry onion soup mix
1/2 cup warm water

Beat together thoroughly.
(I use a large, strong wooden spoon to mix all the ingredients together initially; then use my hands to squeeze and knead the mixture until it is thoroughly mixed.)

Optional:
2-3 strips of bacon
1 cup thick tomato sauce, or
crushed tomatoes
|
Put into loaf pan. Cover with 2 or 3 strips of bacon, if you like. Pour the tomato sauce over all.
Bake for 1 hour at 350°F.
