HAM SALAD with PEPPERS and CORN

Ingredients:

Method:

3-4 thick slices of cooked, smoked ham
1/2 red pepper, diced
1/2 yellow pepper, diced
4 green onions, chopped
1 cup fresh or frozen, thawed corn kernels
Dice the smoked ham. Place in a salad bowl and mix with the peppers, onions and corn.
Chili-Lime Mayonnaise:
1/4 cup mayonnaise
1 tsp chili powder
2 Tbsp fresh lime juice
2 Tbsp chopped coriander (optional)
salt + pepper, to taste
In a small bowl, whisk together the mayonnaise, chili powder, lime juice and (optional) coriander. Season with salt and pepper.
Toss dressing with the ham mixture.
Romaine lettuce
corn chips
Place the ham mixture on lettuce-lined plates. Garnish with corn chips.
