Fried Rice and Vegetables |
Another free form dish...and a great way to use up leftovers.

1 smallish onion
2 big mushrooms
red and green peppers
|
Slice and chop the onions, mushrooms and peppers. Saute in a large frying pan for a few minutes, until softened.

Optional:
any other vegetables, such as
tomatoes, green beans, zucchini, carrot strips

If using other vegetables, stir them in now and allow to cook for a few minutes.

leftover cooked beef, pork or chicken or, cooked shrimp, or crab pieces
2 cups cooked rice
2 Tbsp sesame oil
1 Tbsp hot chili sauce
|
Slice and dice the leftover meat. Add it to the frying pan with the rice, sesame oil and hot sauce. Lower the heat to medium and cook , stirring constantly, until heated through (about 5-10 minutes).
