Sally's No-Bake Chocolate Cheesecake

Caution! This can be addictive.



1 1/2 cups chocolate cookie crumbs
1/4 cup melted butter
Stir melted butter into the crumbs. Press firmly into a springform pan. Freeze.
8 oz cream cheese, at room temperature
1/2 cup sugar
2 egg yolks
1 tsp vanilla
Beat the cream cheese well, then add sugar, egg yolks and vanilla, beating after each addition.
6 oz semi-sweet chocolate, melted To melt chocolate: cut it into small pieces (or use chocolate chips). Heat 1/4 cup of whipping cream almost to boiling, but don't let it boil. Gently stir the chocolate into the cream and let it sit until it melts.
Stir (do not beat) the melted chocolate into the cheese mixture.
1 cup cold whipping cream
Beat the cream until stiff. Fold into the cheese/chocolate mixture.
2 egg whites
With clean beaters and bowl, beat the egg whites until stiff. Fold into the cheese/chocolate/cream mixture.
Pour the filling into the pan over the frozen crust. Return to the freezer until frozen solid.
About 40 minutes before serving, remove from the freezer to the refrigerator.
This keeps well in the freezer for a long time.
