Raisin Bran Muffins
|Preheat the oven to 400-425°|
1/2 cup raisins
Soak the raisins in hot water while you prepare the muffin mix.|
1/4 cup shortening
1/2 cup brown sugar
1/4 cup molasses
Cream shortening, then add sugar, a little at a time.|
Add molasses and eggs. Beat together well.
1 cup milk
1-1/2 cups bran
Stir in the milk and bran.|
1 cup flour
1-1/2 tsp baking powder
1/2 tsp baking soda
3/4 tsp salt
Sift dry ingredients together.|
Stir gently into wet mixture, just until dampened.
Drain the raisins and add them to the mixture.
Spoon into greased muffin tins.
Bake in hot oven for 15-20 minutes.
