Boiled Pork Hocks
A very old-fashioned, inexpensive meal. Two hocks will have enough meat for one serving.
Ingredients:
3-4 lbs pork hocks
3 onions, thickly sliced
1 Tbsp coarse salt
1 tsp pickling spices
1 bay leaf
1 cup water
4-6 carrots, cut in 2-inch pieces
1 medium cabbage, quartered
potatoes
Serves ?
Method:
Place the hocks in a heavy saucepan or Dutch oven. Add the onions, salt, pickling spices, bay leaf and water.
Bring to a boil. Reduce heat, cover and boil slowly for 2 hours or until meat is tender.
Add vegetables 30 minutes before the end of the cooking period.
