Baked Fish Fillets

Preheat the oven to 450°



1/2 cup dried bread crumbs
1 Tbsp grated lemon zest
2 tsp paprika
2 tsp dried oregano
1 tsp dried red pepper flakes

Toss the bread crumbs with the lemon zest and spices until well mixed.
1/4 cup half-and-half cream, mixed with
1 lightly beaten egg, and
1/4 tsp sugar
- OR -
1/3 cup buttermilk

If you are watching your cholesterol, use buttermilk.
6 fish fillets, [catfish, trout, ocean perch]

One at a time, dip the fillets first in the liquid mixture, then in the crumb mixture.
Arrange on a lightly greased baking sheet, and bake until sizzling and cooked through, 12 to 14 minutes.
Serve immediately.
