Sate Babi



3/4 tsp salt
1/8 tsp ground pepper
1 Tbsp ground coriander
1 Tbsp cumin seed
1/2 tsp vegetable or peanut oil

Combine the dry spices in a bowl or large Ziplock bag. Sprinkle the mixture with the oil and shake or stir together.
3 lbs pork cut into 1-1/2 inch cubes

I use pork tenderloin, but you could also use a pork loin roast, or chops, or even pork butt.
Add the meat to the spice mixture, stirring or shaking to coat. Let stand for 20 minutes.

1/2 cup sliced onions
1 Tbsp brown sugar
1/4 tsp powdered ginger
1/4 cup soy sauce
Stir the brown sugar and ginger into the soy sauce. Add the onions and liquid to the meat mixture.
Let stand, refrigerated, for at least one hour (you can leave it as long as 12 hours), stirring occasionally.
Preheat the broiler or barbeque. Thread the meat on skewers and broil or barbeque for 15 minutes, turning and basting frequently.

Serve over rice with lime wedges on the side.
