Mexican Burritos



2 Tbsp vegetable oil

2 Tbsp flour

1 cup beef broth

1 tsp cumin seeds

1 tsp ground cumin

2 cloves of minced garlic

2 tsp oregano

1 tsp red pepper flakes

1 tsp white vinegar

1 lb ground beef

1 pkg of tortillas


refried beans

fried onion rings, or chopped onion

avocado slices

shredded cheese


plain yogurt, or sour cream

Heat oil in a large skillet. Mix in flour and allow to brown slightly. Pour in the beef broth and whisk until smooth.

Mix in cumin seeds, ground cumin, minced garlic, oregano, red pepper flakes, vinegar and salt.

Stir in the ground beef, mixing well to crumble all the meat. Cover and simmer, stirring occasionally, for 45 minutes.

Place the tortillas between sheets of damp paper towels and heat briefly in the microwave.

Place a spoonful or two of the meat mixture down the centre of each tortilla. Top with any of the toppings. Fold the tortilla in half over the filling and then fold the flat edges back, to make a wrap that is easy to handle.
