Greek Roasted Potatoes


Preheat oven to 375°


5-6 potatoes

4 garlic cloves, finely chopped

½ cup olive oil

juice of 1 or 2 lemons

1 tsp dried oregano

1 tsp dried rosemary


½ cup chicken broth (or water)

Serves 4-6


Peel and cut potatoes into evenly-sized wedges.

In a large bowl, mix the garlic, olive oil and lemon juice and herbs. Toss the potatoes in the mixture until coated all over.

Pour the potatoes and remaining olive oil mixture into a shallow roasting pan. Sprinkle with sea salt and pepper (if desired).

Add enough broth or water to just cover the bottom of the pan.

Roast in the pre-heated oven for 45-60 minutes, until the potatoes are brown and crispy. Add more liquid to the pan, if necessary, during the roasting.
